After hand-harvesting at optimal maturity, whole clusters of Viognier were held overnight for a brief skin contact to enhance texture and complexity, then gently pressed and settled before a cool fermentation began. Two-thirds of the fermentation took place in neutral French oak barrels, polishing the wine’s edges and building richness. After five months in barrel, the wine was racked and bottled, resulting in a beautifully balanced and complex Viognier that reflects the harmony of the vintage.
